Weekends are the perfect time to chill. Mostly i look for something quick and easy yet tasty, that can save my time, plus it should not be unhealthy for my family.
Here’s a quick healthy recipe that you van enjoy anytime..lets start..
For the Batter –
Finely Chopped Green Chilli (as per taste)
Finrly Chopped Ginger (as per taste)
Finely Chopped Garlic (as per taste)
Cumin Seeds – 1 Tsp
Olive Oil – 3 Tbsp
Wheat Flour – 1 Cup
Eggs – 2
Milk
Salt (as per taste)
Pepper (as per taste)
In 2Tbsp oil saute cumin seeds first, wait until they sputter, then add ginger garlic & green chillies. Saute till golden brown. Keep aside.
Take wheat flour add the sauteed mix to it. Mix well. Add eggs, 1 tbsp olive oil, salt & pepper and mix again. Now add milk little by little to it & make a smooth dripping batter. Do keep in mind that it should not be too thick. It should be able to spread out on the pan. For the Stuffing-
Mustard Seeds – 1 Tsp
Potato – 2 Boiled (Sliced)
Onion – 1 Thinly sliced
Boiled Corn – 1/2 Cup
Dry Masala
Garam Masala – 1 Tsp
Turmeric Powder – 1 Tsp
Red Chilli Powder – 1 Tsp
Salt (as per taste)
Take a pan, heat oil, add mustard seeds & once they start to sputter, add onions. Saute for a minute and add Corn, Potato, add Dry masala & Salt to it.
Take a flat griddle, add a little olive oil, spread the pancake mix evenly, flip it after its cooked nicely from one side. Remove it from flame & spread a little stuffing on one edge, rolling it gently and tightly.
Your Pancake is ready, Serve hot with Green Chutney.
